Bream cafe
We were delighted to be involved in Sidar’s new venture – Beam Café on the sort after Highstreet of Highbury London.
The Brief:
To design an island cooking suite that on one side would cater for a lunch menu and casual dining with the opposite side catering for a flamboyant chef, enabling him to run private dining sessions and chefs’ specials predominantly based around the bespoke manufactured Robata Grill.
The Result: (Before Hygiene Clean and Final Polish)
A near perfectly balanced kitchen based around a central cooking island. Prep space all around the perimeter with a large pass and hot cupboard on the service end.
The potwash is out of view from the private dining area behind a partitioned wall but in sight of the cooking area.
Upstairs features a bespoke bar that faces trade as they entre and has split glass wash stations to cope with demand – with busy match days in mind.
We purposely chose the following equipment, bearing both budget and performance in mind:
-
Refrigeration from Foster Xtra
-
Fabrication from CED
-
Fryers by Valentine
-
Griddles and Range from Blue Seal
-
Bespoke Robata Grill
-
Rational Combi Oven
-
Meiko premium dishwasher with heat recovery
We’d like to thank both Sidar and Joe for involving us in this fantastic project.
