Brean Country Club Leisure Centre
The Brief
To create a kitchen capable of serving anything from a burger to catering set menus for large events.
The kitchen was part of the new golf club at Brean Leisure Park, a modern building providing panoramic views across the golf course. The ground floor was predominantly the club bar and restaurant with and the first floor as event space.
We were tasked with using the space efficiently and also to minimise the carbon footprint and this was an all electric kitchen.
To provide the versatility that the restaurant required we opted for two 20 grid combi ovens. These were complimented with induction range, chrome top griddle, and fryers. We specifically selected Valentine fryers with the turbo function to ensure a fast refresh rate to help with busy periods. The first floor was serviced using a dumb waiter and complimented with chill-regen cabinets.
The Result
The canopy spanned the whole of the cookline and was approximately 10m in length.
Opposite the cookline was a centre run and pass. The Pass was enormous, double depth with twin track lights. The centre wall within which the services ran was made offsite in stainless steel and included a riser at each end allowing the services to drop down from over head and supply the centre of the kitchen. The centre run included a mixture of prep space, sinks, refrigeration and even an instant hot tap.
The potwash included a waste disposal unit and a premium hood washer from Meiko.
