The Brief
MJMK approached Tailor Made to design and install two kitchens and two bars into quite a unique and quirky space in Charlotte Street London. The main kitchen and bar being the key focal point of the restaurant. Every customer visiting the restaurant is able to see Michelin starred chef Nuno Mendes working with customers sat looking directly into the kitchen.
The Result
The main kitchen has two cooking areas, a large open griddle that was sourced from Germany and fitted to a bespoke counter top, next to the griddle is a three zone Robata grill which provides the theatre. Backing onto this there is compact prep area, display meat aging cabinet and plating area which is all restaurant facing and open plan.
The basement kitchen is predominantly out of view throughout the day, but VIP customers and those in the chef’s dining room will be given a tour prior to eating, you really do enjoy the full culinary experience. Space in the basement and access to it is very tight, so we had to make the most by using specially sourced equipment and intelligent designs. This kitchen has everything site needs to produce the best Portuguese dishes.
The central island worktops were cut from sandstone in Portugal, so we had to ensure our fabrication worked with this to highlight the aesthetic of the stone, as well as supporting the weight of stone and the equipment. This presented a challenge in the basement due to the access restrictions, so we came up with a solution to divide the frame up into 6 pieces, the main frame, shelving sections and cladding panels that could be manoeuvred into the room and assembled on site. A solution that was then adopted for most items throughout the build.
The fit and finish is first class and the restaurant produces the finest of dining experiences.
