After completing successful installations at both Lincoln and Chichester, we were delighted to work with Three Joes on their latest site in Cambridge.

Taking over an old Bella Italia, very little of the previous brand was kept with Three Joes choosing to truly stamp their mark in the bustling Cambridge High Street.

The restaurant centre piece is a theatrical and enormous gas dome oven, corroborated by a double deck countertop electric pizza oven next to it. The design for this area was very minimal and simplistic and complimented with a marble worktop on which the pizza prep and cooking is done front of house in the restaurant, thus the fit and finish is superb and, the pizza set-up proves very efficient and capable of performing when covers are maxed out.

The bar is a stainless counter from end to end with cocktail stations and ice wells on the front bar and a lovely herringbone tiled back bar display throughout, and of course workflow and ergonomics are fully taken in to consideration too with a view to maximising efficiency and speed of service.

Equipment specified for this project included, Gamko Keg Coolers, Cuppone Pizza oven via LLK who specialise in all thing’s pizza, warewashing from Maidaid and refrigeration from Foster as well as some specialist Italian refrigeration to better compliment the intricacy of pizza prep.
